Which sites accept an animated GIF profile picture?

It varies and changes over time. Google Accounts accept GIFs, and so do some forums, chat tools and community sites. Discord only animates avatars for Nitro subscribers. LinkedIn doesn't accept GIFs at all, and several others turn them into a still. Check the site's help pages before you spend time on it. The GIF's first frame is what you'll see where it doesn't animate.
How big will the GIF be?

Usually 100 KB to 800 KB. Photos with lots of detail make bigger files than logos and flat colours, and 512 px files are roughly three to four times the size of 256 px ones. The file size is shown before you download.
Why do the colours look slightly different in the GIF?

The GIF format can only hold 256 colours per frame, so smooth gradients in photos can show slight banding. Simple images and logos are unaffected. For photos, the 256 px size keeps banding hard to notice.
Can I use only one image?

Yes. With one image, each animation becomes a looping effect: a coin-style flip, a carousel slide, a spin, a pulse or a light sweep.
Are my images uploaded?

No. The frames are drawn and the GIF is encoded in your browser. Your images never reach our servers.
